These ‘Zucchini and Cheese Pies’ are a delicious lunchbox snack for ths kids – or yourself! They are quick and easy to make, so why not get the kids involved in the kitchen too!

Enjoy them straight away or freeze them for a perfect snack later in the week.

• Vegetable oil spray or butter to grease muffin tray
• 1 zucchini, grated
• 6 slices of wholemeal bread
• 1 cup grated cheddar cheese
• 2 eggs

Makes 6 pies.

• Preheat oven to 180ºC.
• Grease a 6 cup muffin tray with vegetable oil spray or butter.
• Squeeze the grated zucchini to remove excess liquid.
• Use a wooden spoon to combine zucchini and cheese in a large bowl.
• Crack both eggs into the zucchini and cheese mixture and stir to combine.
• Remove the crusts from each slice of bread.
• Place one slice of bread into each muffin cup. Use your hands to mould the bread slices into the muffin cups.
• Spoon the mixture into the muffin cups.
• Cook for 15-20 minutes or until golden brown. Cooking times may vary.
