Are you looking for a way to entertain the kids these school holidays? Why not get messy in the kitchen with them and whip up this week’s tasty recipe – “Healthy Carrot Cake”.

Filled with spices, fruit and nuts, this recipe is great for a morning or afternoon snack!

Serves: 20

Ingredients
• 2 cups (280g) wholemeal self-raising flour
• ½ teaspoon bicarbonate of soda
• 2 teaspoons ground cinnamon
• 1 teaspoon ground nutmeg
• 1 teaspoon mixed spice
• 2 cups (270g) grated carrot
• ½ cup (40g) shredded coconut
• ½ cup (60g) chopped walnuts
• ½ cup (85g) sultanas
• 2 eggs
• ¼ cup (60ml) apple juice
• 1 cup (250ml) low-fat milk
Topping
• Natural Greek Yoghurt
• Chopped walnuts

Method
• Grease and lightly flour a cake tin.
• Sift flour, soda and spices. Return bran to flour mixture.
• Add carrot, coconut, nuts and sultanas.
• Beat eggs until fluffy and add apple juice. Beat again and add milk.
• Fold into dry ingredients. Stir until well mixed and pour batter into a prepared 20cm cake tin.
• Bake in a preheated 200C (400F) oven until cooked through (approximately 40 – 45 minutes).
• Turn out and cool on a cake rack.
• Once cooled spread the natural Greek yogurt on top and sprinkle with chopped walnuts
