The great thing about this week’s recipe – ‘Gourmet Beef Burgers’ – is that you can easily make them at home with all the flavours you love minus the high levels of sneaky saturated fats and salt that most takeaway shop burgers contain!

The great thing about this week’s recipe – ‘Gourmet Beef Burgers’ – is that you can easily make them at home with all the flavours you love minus the high levels of sneaky saturated fats and salt that most takeaway shop burgers contain!

Serves: 4

Ingredients:
• 400g lean beef mince
• 2 tsp olive oil
• 1 egg
• 1 onion
• 160g or 8 slices low fat cheddar cheese
• 2 cups baby spinach leaves
• 2 tomatoes, sliced
• 1 avocado
• 1 cup beetroot, sliced (optional)
• 4 wholegrain rolls
• 2 tsp oregano

Method:
• Place mince meat, egg, olive oil and oregano in a mixing bowl, and combine well
• With slightly wet hands, form the meat mixture into 4 patties
• Heat a non-stick frypan on medium heat and once warm add the meat patties, with a spatula press down on the patties to flatten them a little
• Cook the patties for 5-10 minutes or until brown
• Cut rolls in half to grill with 2 slices of cheese on each
• Spread avocado on each toasted roll
• Transfer cooked patties onto rolls, and top with tomato, spinach leaves and beetroot
