Serves: 4

Ingredients:
400g (2 medium) skinless chicken breast fillets, diced
2 cups semi-dried tomatoes, chopped
2 cups mushrooms, chopped
2 cups sliced leek
3 cups spinach, chopped
1 chopped brown onion
2 tsp olive oil
2 cloves crushed garlic
1 cube salt reduced chicken stock in 1.5L water
160g arborio rice

Method:
• Heat a large pot on low and add olive oil and diced chicken.
• Heat until golden, then add onion, crushed garlic and leek and cook until soft.
• Add semi-dried tomatoes and mushrooms for 1 minute and then transfer rice to the pot.
• Gradually add spoonful’s of stock to the pot and allow the rice to absorb the liquid in batches.
• Use a wooden spoon to continuously stir the rice, while gradually adding the stock.
• When only a cup of stock is left to add to the mixture, add the spinach and mix well.
• Finish combining the stock to the rice and once absorbed turn off heat.
