If you’ve been searching for the perfect banana bread recipe then look no further! Packed with omega 3 and fibre, this snack is the perfect coffee or tea companion.

Serves: 10

1.5 cups walnuts, chopped
1 cup apple juice
2 tbsp golden syrup
2 cups wholemeal self-raising flour
1 cup low fat milk
2 eggs
4 mashed bananas
1 tsp bicarbonate soda

Pre-heat oven to 180ºC.
Line a deep baking/loaf dish with baking paper.
Sift the flour into a large mixing bowl.
Whisk eggs with a fork.
Heat golden syrup in a small saucepan on low heat for 2 minutes or until melted.
Add the golden syrup, apple juice and bicarbonate soda to the bowl and mix well.
Add the whisked eggs, milk and banana to the mix and combine well.
Spoon the mixture into the lined pan and bake for 40 minutes or until cooked.

Tip: poke a skewer into the centre of the cake after 40 minutes, if it comes out clean – it’s cooked
