Yes, you read that right. This week’s recipe is a chocolate mousse made from avocado! This healthy twist on a traditional recipe makes for a rich, silky smooth and delicious weekend treat!

Serves: 6

• 2 large avocados
• 1/3 cup low fat ricotta cheese
• 2 tsp vanilla extract
• 2 tbsp golden syrup
• 2 tbsp cocoa powder
• 100g dark chocolate
• 1 cup mixed berries
• 1 tbsp cinnamon

• Scoop avocado out of shell into a bowl and remove both stones
• Place avocado, vanilla extract, ricotta cheese and cocoa powder into a food processor
• Process for a few seconds, then use a spoon to scoop any large chunks into the centre
• Process mixture once more until completely smooth
• Place dark chocolate in a small saucepan and heat on low, once melted pout into food processor, then process once more until mixture is smooth and well combined
• Spoon mixture into glasses and top with mixed berries, sprinkle cinnamon on top
